As a mom and full-time working lady, cooking dinner is not always high on my motivations when I get home. This quick and simple recipe is a go-to in my house because of how little effort it takes and how quickly it can be made. Plus, it’s one of my husband’s favorites. Win-win!
1 pound lean ground beef (or ground turkey)
1 package Mexican style shredded cheese
1 package of taco seasoning
1 can of red enchilada sauce
8 x 11 baking dish
•Preheat oven to 350. Start out by browning your meat, drain, add taco seasoning & follow the directions on the package.
•While your meat is cooking, form a thin layer of the red enchilada sauce on the bottom of your baking dish so your tortillas don’t stick. Cut your tortillas into 4 triangular pieces. The amount of tortillas I use differs every time I make this dish. For example, last night my husband requested an extra layer of tortillas on the top, so I used more than normal.
•Now, once your meat is finished, start layering just like a casserole: tortillas, meat, cheese, enchilada sauce (use to your liking). Keep layering until your dish is full or you run out of ingredients.
•Top with a layer of cheese, pop that bad boy into the oven for 25-30 minutes and BAM! Dinner will be served. While it’s cooking you can play with your children, take your fur babies on a walk, or just simply relax & watch TV.
Another thing I love about this dish is you can tweak it and make it exactly how you want. If you want to add onions, peppers, jalapenos, etc. go ahead! If you don’t like red sauce, use green! If one night you want chicken instead of beef, too easy! My husband always dresses up his own plate. Now that Paxton is eating everything we’re eating, I have to watch my ingredients!
